For this specific recipe, I am using Scimitar Oryx, but feel free to use Axis or other kinds of antelope.
Marinade:
2 cups soy sauce
1 tbl garlic powder
1 tbl minced onion
1 tsp cayenne pepper
2 cups Jack Daniels Whiskey
Soak for 4 hours Wrap in jalapeño bacon Grill to internal temp of 125 Last 10 min glaze with charred Peach & Habanero Finishing Gaze (or your favorite spicy fruity glaze).
