fall time, jerky time

”If you go hunting this year, I want some Jerky!” Of course, I’m going hunting this year...and everyone knows it! That’s just their ”polite way” of saying “Hey, I know the season is around the corner, you have plans every weekend in the fall and winter, I’m getting in line for your jerky NOW!” A favorite recipe of mine is my Jerky Recipe!! Many people anticipate the wait all year for it! They speak of it often and fondly! Some are hunters and some are non-hunters. Either way, I’m glad my friends and family can benefit from my hunts as well. And be just as excited about the upcoming season from the comfort of their warm home while I’m excited and freezing in a blind LOL!!! So, everyone has asked for it for a long time... here it is!! Enjoy!!! The mixture is per 3lbs. of wild game meat.

  • 1 Tbsp Liquid Smoke

  • 1/2 Cup Soy Sauce

  • 3/4 Cup Worcestershire Sauce (I hate saying that word)

  • 1 Tsp Garlic Powder

  • 1 Tbsp Accent Seasoning

  • 1/2 Tsp of Allspice Powder

  • 1 Tsp Ground Pepper

  • 1/2 Cup of Water

  • 2 Tbsp Dried Onion Flakes

Mix the above ingredients into a 1-gallon jar. Add your choice of wild game meat to the above mixture. I slice mine 1/8” thickness. Slicing meat while partially frozen helps the handling and slicing of the meat. After wild game meat is added to the mixture, let it sit for 3 days, shaking frequently. Dry in dehydrator, smoker or oven according to preference. Enjoy- Tess & Andrew Talley
